I've heard it said that quinoa flour has a subtle flavor…I’m not sure that’s how my taste buds interpret it – I find it quite the opposite, but if you enjoy the flavour, this recipe will suit you perfectly.
That characteristic nutty flavor is well matched with apple and walnuts in this recipe.
Contrary to my usual spiel about grain and gluten free flours being best mixed with other flours, this recipe uses quinoa flour only. The other ingredients lean it out nicely so that it’s moist and makes crumbs just like a muffin should.
As with other whole grain flours, the result is more dense and more filling. Less bulk, more satisfaction. Perfect for people with small lunchboxes or short tea breaks.
Mix together oil and sugar. Beat in eggs. Stir in applesauce, grated apple and vanilla.
In a separate bowl, stir together the remaining dry ingredients. Add dry ingredients to wet mixture, and stir by hand until well combined.
Pour into a muffin tray lined with patty pans and fill each to the top. Quinoa flour, like other grain free flours, doesn’t rise as much, so you don’t have to be as cautious with overfilling.
Bake for 30 minutes or until an inserted toothpick comes out clean.
